Simple Summer Salad

Summer is a fun, active time of year for me. There are days when I want to spend as much time as possible outdoors jogging, cycling, or going to the river with my friends. It can be very easy to make less than healthy choices on days like this. Opting for a quick drive thru or munching on snack food from the convenience store. I have found that making simple salads in the evening opens up the next day for more healthy and CLEAN EATING options. This recipe is a base. I use these staple veggies and add all kinds of variations throughout the Summer. I hope this helps you make good choices for yourself and your family. You deserve it!

Ingredients

1 bn
Leafy Green Lettuce (Washed and patted dry)
3
Baby Carrots
1
Cucumber
1
Roma Tomato
1
Basil Leaves (for garnish)
1
Lemon (for juicing)

Instructions

Chop or tear your lettuce into bite sized pieces. Slice your tomatoes, cucumber, and baby carrots. Juice the lemon for a simple dressing! ( any type of citrus will work here. I will sometimes change it up with a grapefruit or an orange). Happy Eating!

Notes

Always choose organic and local when at all possible. This increases your consumption of nutrients, vitamins, and minerals. I have found that placing a lemon in warm water for a few seconds (with the peel on) prior to juicing will allow you to get more juice! It is also a great idea to place a small paper towel inside the plastic bowl with the salad to keep it from wilting.
