Paleo Spinach Bacon Salad

I LOVE BACON! Seriously, you guys, I really love bacon. So often, I hear my family members asking me for health advice. They say things like, "I eat pretty healthy, but sometimes I do have bacon." They get this guilty look on thier face apologizing to me for eating bacon. Try as I may to conivince them that bacon is not the enemy we have been trained to think it is... they never seem convinced. We purchase bacon that is ethically sourced and free of added sugars. And we eat it several times a week.

Today's recipe has bacon as the star of the show. Enjoy! 

Ingredients

2 sli
Bacon (Know where your bacon comes from and check the label)
1⁄2 c
Fresh spinach leaves
1 t
Bragg's Apple Cider Vinegar
1 t
Local honey

Instructions

Fry your bacon as usual. I do mine on the stove top. I like mine really crispy with a little black around the edges. 

Remove the bacon from the pan, but keep all of the grease in the pan. 

Remove from the heat and allow to cool for a few minutes.

Whisk in the apple cider vinegar and honey. 

Crumble the bacon and add it to the top of the spinach leaves.

Pour the bacon vinaigrette you just created over the leaves (it should be just warm enough to wilt them slightly, giving them a great texture!)

Enjoy your bacon! 

Notes

If you prefer a wetter salad (more dressing) add more apple cider vinegar to the pan. I prefer a pretty lightly dressed salad.
