Pressure Cooker Bone Broth

Two problems, one solution. 
1. I've had an Elite Pressure Cooker collecting dust in my cabinets for months. 
2. I've had an insane desire to make some delicious bone broth. 
Solution: Why not use my pressure cooker to make a fast bone broth? 

All of the bone broth recipes I have seen require several hours on the stove or in the crock pot. A couple weeks ago I stumbled upon the Swell Living Blog. Finally, someone was telling me that this far fetched thought of mine was attainable! I adapted the recipe a bit to fit my style and here is what I came up with.

Bone broth made in a pressure cooker

I grabbed 1/4 of a cabbage, carrots, onion, 1 tablespoon garlic, handful of mushrooms, half a habanero, all the bones (and still clinging meat bits) of a whole pastured chicken, 1 tablespoon organic, unfiltered apple cider vinegar, basil and rosemary. Tossed it all in my Elite Pressure Cooker and cooked it on high pressure for 3 hours. It was so simple and the reslut was a dark, rich, flavorful bone broth. I used some of it within a day or two and froze the rest in ice cubes to maintain freshness. Bone broth has multiple benefits including easing PMS, fatigue, symptoms of cold and flu, anxiety and allergies. Not to mention it makes a great treat for my one year old puppy!

Ingredients

Carrots

Onion
1 T
Garlic
1 bn
Mushrooms

Cabbage
1⁄2
Habanero Pepper

Bones of Whole Pastured Chicken
1 T
Unfiltered Apple Cider Vinegar
1 bn
Basil and Rosemary
1
Water (Enough to cover all meat and veggies)

Instructions

Place all ingredients in Pressure Cooker and add enough water to cover it all. Cook on high pressure for three hours. Enjoy!
