Vegan Chili and Goodbyes to a Close Friend

This month one of my best friends in is moving very far away. Mandy and I have been friends for almost two years, but it feels like we have always known one another. When I first moved to Birmingham I was very lonely. I had left all of my friends and family to come to a brand new city and start a new chapter in my life. Mandy was one of the first friends that I made.

Mandy has one of the most genuine hearts of anyone I have ever known. Her spirit radiates love, honesty and grace. I know that no matter what things I bring to her to speak about, she will lend me a kind and understanding ear. 

As Mandy starts this new chapter in her own life, I hope that she meets someone just as strong. Someone who will support her and carry her through tough times and rejoice with her in good times. I hope she meets her "Mandy". I sure will miss mine. 

For her goodbye party, I put together this simple, but delicious vegan chili recipe. The turmeric gives this recipe anti-inflammatory benefits, the onions boost immunity, and the cocoa powder gives a delicious smokey flavor! I hope you enjoy it. 

Ingredients

Small Onion
1 cn
Black Beans or Kidney Beans
1 cn
Black Eyed Peas
1 cn
Diced Tomatoes (Use a large can. Use all the liquid! )

Celery Stick Diced
1 t
Cayenne Pepper
1 t
Turneric
1 t
Parsley
2 t
Kosher Salt
1 T
Garlic Powder
2 T
Chili Powder
2 T
Onion Powder
2 T
Cocoa Powder (Be sure it's vegan)
1⁄2 c
Purified Water

Instructions

Add all ingredients to a large pot and cook on low to medium low for at least two hours.

Be sure to stir regularly to ensure it does not stick or burn. 

You can also add fresh chopped veggies and cilantro at the end to give it a unique crunch! Have fun with it!
