Beet Root Coconut Latte


This recipe is inspired by the lovely colors of Spring. My allergies may not be happy, but this superfood latte is sure to soothe them.  

Beets are full of things our bodies need like: 

  • Iron
  • Magnesium
  • Folic Acid
  • Calcium

They are thought to be anti-inflammatory, cleanse the colon, and create an overall sense of well-being. I personally love the flavor of beets, especially when combined with sweet coconut milk. Ingredients

2 c
Whole Fat Canned Coconut Milk
1
Small cooked beet (Love Beets is my favorite brand)
1 T
Honey
1 t
Vanilla Extract

Instructions

Pour 1 cup of organic coconut milk into a Breville blender and reserve the 1 cup of the coconut milk for later use. 

Add 1 small cooked beet to the blender with the 1 cup coconut milk and blend for 4 minutes on the "soup" setting. (alternately blend the ingredients on high and then move to a saucepan to heat on the stove until warmed through). 

Pour the coconut beet mixture into your glasses, rinse your blender and get ready for the next step! 

Pour remaining 1 cup of coconut milk into your blender. Add 1 tablespoon honey and 1 teaspoon vanilla extract. 

Blend on "soup" function for 3 minutes. (alternately blend the ingredients on high and then move to a saucepan to heat on the stove until warmed through). 

Pour the coconut milk into the cups and enjoy your superfood latte. 

Notes

***I use my Breville Blender "soup" setting to prepare this latte and it worked great! But, if your blender doesn't have soup setting you can simply heat the two separate parts on the stove top.
