Clean Eating Cucumber Salad

Hi, Friends! Welcome back to Monday Munchies where I share a simple recipe with you that uses basic ingredients found in your kitchen. On Saturday I went to Pepper Place Market and found these gems!

I love tomatoes! What better to highlight each flavor than make a tangy cucumber salad?

I grabbed a cucumber, lemon, and 2 types of basil from my garden (one of which is a spicy greek basil. Yum).

Then I roughly chopped everhthing, added 1 1/2 tablespoons of Extra Virgin Olive Oil and squeezed the juice from one lemon on top.

Have fun eating this tangy Cucumber Salad!

Ingredients

Tomatoes (I chose different types and the green was delightfully tangy)
1
Cucumber
1
Lemon (Juice)
1 bn
Basil Leaves
1 t
Pepper (to taste)

Instructions

Chop up all your ingredients. Squeeze the lemon juice on top. Add 1 1/2 tablespoons of Extra Virgin Olive Oil. Mix together, chill, and enjoy! Happy Monday Munchies!
