Fresh Fruit Salad

Welcome back to Monday Munchies, where every Monday I will be sharing a simple, clean eating recipe that you can make using ingredients from your pantry. If you enjoy this recipe, make sure to pin it! I would love to follow your Pinterest boards! Last week for Thirsty Thursdays I did recipes for 5 girly drinks! I ended up with lots of leftover fruit.

So I figured, why not make a fresh fruit salad with my leftovers!

I chopped up a few strawberries and a couple slices of apple and squeezed some fresh lemon juice on top to keep the apples from browning.

Then I chopped up a couple slices of orange and halved some lovely large grapes I found on sale.

At this point my kitchen started smelling like Spring!!!! This recipe is almost as fun to make as it is to eat! 

Next I chopped a few slices of grapefruit and a few fresh mint leaves. Can't you just smell that beautiful green mint!

Then I grabbed my trusty 0 calorie, all natural Stevia.

I added two packets to about 2 tablespoons of pink champagne. (The champagne adds a delightful flavor, BUT you could exchange this for Organic Cranberry Juice or Organic Apple Juice and it would be delicious.)

I then poured this liquid mixture onto the fruit and gently mixed it all together. 

This recipe will have you ready to go out and take a walk, ride a bike, or play with your family in this lovely Spring weather! 

 

 

Ingredients

Strawberries
2 sli
Apple
1⁄2
Lemon
4
Grapes (Large)
2 sli
Oranges
2 sli
Grapefruit
5
Mint Leaves
2
Stevia Packets
2 T
Pink Champage (Or organic juice of choice)

Instructions

Chop up apple slices and squeeze the juice of half a lemon on top to keep it from browning. Then chop up the remaining fruit. Mix together 2 packets of stevia and 2 tablespoons of pink champagne ( Organic Cranberry Juice, or Organic Apple juice will also work). Then pour the juice mixture on top of the fruit and mix it all together gently. Enjoy alone or with a meal as a fresh side. Happy Spring!!! (Please take advantage of the recipe tool on this page.
