A new friend recently told me about a drink called Switchel. I had never heard of it before, but he boasted of its health benefits and delightful flavor, so I was intrigued. Switchel originates as an Amish tradition. The drink is used to quench thirst and aid in electrolyte balance during harvest time. Switchel typically consists of vinegar and ginger. Sometimes honey or molasses are added. I chose to use my Champion juicer and juice 6 apples, 1 carrot, and 1 small piece of fresh ginger. Hi, Friends! Welcome back to Monday Munchies where I share a simple recipe with you that uses basic ingredients found in your kitchen. On Saturday I went to Pepper Place Market and found these gems! I love tomatoes! What better to highlight each flavor than make a tangy cucumber salad? I grabbed a cucumber, lemon, and 2 types of basil from my garden (one of which is a spicy greek basil. Yum). Then I roughly chopped everhthing, added 1 1/2 tablespoons of Extra Virgin Olive Oil and squeezed the juice from one lemon on top. Have fun eating this tangy Cucumber Salad!
