Gluten Free Pineapple Upside Down Cake

Pineapple Upside down cake is one of those traditional desserts that no one wants to give up, regardless of allergies or food sensitivites. This recipe combines a gluten free cake mix, fresh pineapple, grass-fed butter and coconut sugar. Oh, I also had some duck eggs and used them in place of chicken eggs. They made the cake so insanely fluffy!

Holidays are a time for family, friends, gifts, and PIE! In my childhood home, the smell of pie in the oven was a sign that Fall was here and Winter was coming soon. Pecans have always been a big deal in my family. At my grandparents' house in the Mississippi Delta there are giant pecan trees. I remember as a child my dad climbing the tall trees and shaking the branches. Then all us kids would run to gather up the pecans.
