Today I have a delightful recipe to share with you! It is perfect to whip up when you have a party to attend this Holiday season. This recipe is adapted from Anne Byrn Saves the Day , a cookbook with fantastic recipes designed to "rescue any occasion". I had the privilege of going to a live demo of this recipe and have been wanting to try it out ever since. The original recipe calls for cream cheese. I find myself browsing the web looking for adorable things to add to my kitchen on a regular basis. Hi, Friends! Welcome back to Monday Munchies where I share a simple recipe with you that uses basic ingredients found in your kitchen. On Saturday I went to Pepper Place Market and found these gems! I love tomatoes! What better to highlight each flavor than make a tangy cucumber salad? I grabbed a cucumber, lemon, and 2 types of basil from my garden (one of which is a spicy greek basil. Yum). Then I roughly chopped everhthing, added 1 1/2 tablespoons of Extra Virgin Olive Oil and squeezed the juice from one lemon on top. Have fun eating this tangy Cucumber Salad!
