Two Ingredient Clean Eating Popsicles

Welcome back to Monday Munchies, where I share with you an easy to make recipe that you can create using ingredients you most likely already have on hand. Today I will be sharing with you one of the easiest, most delicious snacks I have ever made. Using two ingredients: ripe cantelope and whole milk vanilla yogurt. 

This weather has been absolutely divine. I am loving the longer days of sunshine, the wildflowers in bloom, the Barons baseball games, and all of the fun cookouts and barbeques. I love my city!  So what better way to enjoy this summer heat than to make popsicles! 

First take 10-12 slices of canetelope and remove the peel and place into your blender. I used very ripe cantelope to make sure it was as sweet as possible.

Next measure out 1/2 cup of whole milk yogurt and add it to your blender. ( I chose to use pre sweetened vanilla, but you can just as easily use unsweetened plain yogurt to avoid extra sugars). 

Blend these together for a couple of minutes until the cantelope is liquified.

Pour into popsicle molds and freeze for a couple of hours. It is that simple! 

The popsicles come out creamy, fruity, fresh and light! Enjoy these delicous summer treats on the porch, in the garden, or, if you're like me, before you even leave the kitchen! Happy Monday! 

Quick Side Note: It is very simple to make this into a smoothie instead of popsicles. I've done this recipe in the blender with 2 bananas added and 4 cubes of ice. Or you can use frozen bananas. This recipe can be a lot of fun! Change it up, add some clean vanilla extract, some orange essential oil, even berries. I'd love to hear how you changed it up. Ripe Cantelope
1⁄2 c
Whole Milk Vanilla Yogurt

Instructions

Take 10-12 slices of ripe cantelope and add to blender (make sure you remove your peel). Add 1/2 cup of whole milk yogurt. Blend until liquified. Pour into popsicle molds. Freeze for 2-4 hours (times may vary depending on your popsicle molds). Pop out & Enjoy!

I was reading over this recipe again because I'm thinking of making it tomorrow! I was just wondering... Is it totally necessary to have whole milk? I'm not the biggest fan of while milk, but I've got 2% and I was thinking of adding it to some peach yogurt or something (scraping the bottom of the barrell, er--fridge, here since I haven't been grocery shopping in awhile). Do you think it'd still work?

It will most definitely work! I always suggest whole milk because it is a cleaner ingredient. Whole organic milk is in its most natural state, and therefore easier for our bodies to handle. It also provides the most benefits compared to reduced fat milks. You can always do a creamy organic almond yogurt or canned whole fat coconut milk too! I'm glad you're going to try it!
