Clean Eating Egg Salad

This was the first week of the Pepper Place Farmer's Market in Birmingham. I was so excited about this day, and I was not disappointed. The place was filled with vendors from all over the area selling fresh, high quality products. Check out these pastured eggs I grabbed from Marble Creek Farmstead. I could hardly wait to get home and make something fun with them! 

So without further adieu, here is my recipe for Clean Eating Egg Salad! 

 

Ingredients

2
Eggs (Small)
2 T
Greek Yogurt (Whole Fat is the healthiest type)
2 ds
Pepper
2 ds
Garlic Powder

Instructions

This recipe makes enough for one salad or enough for two sandwiches. 

This is a salt-free recipe. We try to avoid extra sodium most of the time. But, if you usually eat salted foods, you may need to add a few sprinkles of salt to this recipe.

Notes

Boil eggs to desired doneness (I prefer a slightly soft boiled egg). 

Peel the eggs and allow to cool a couple of minutes. 

Mix eggs and yogurt together by hand. 

Add a few sprinkles of pepper and garlic powder.
