Bacon and Gouda Stuffed Apples

Nothing informs my senses of the arrival of Fall more than the aroma of apples baking with cinnamon. Combine that with the inviting smell of bacon and your family will be running to the kitchen to find out what you're making! 

This recipe is warm, savory and sweet. The addition of gouda makes for a creamy side dish everyone will love. 

Ingredients

Apples (I used heirlooms local to my area))
1 T
Butter (I use grass-fed )
1⁄2
Onion (Diced small)
4 sli
Smoked Gouda Cheese (chunks or slices)
3 sli
Candied Bacon (Diced) (Candied with maple syrup and coconut sugar)
1⁄2
Lemon (for squeezing)
1 ds
Salt and Pepper
1 ds
Cinnamon
1
Handful Candied Pecans (Candied in coconut sugar)

Instructions

1. Preheat oven to 350 degrees.

2. In a mall suttee pan, melt the butter. 

3. Add diced onion and cook on medium until translucent. 

4. To a small bowl add the sauteed onion and diced candied bacon and mix well. 

5. Slice off a small part of the top of the apples. Discard tops. 

6. Squeeze lemon juice on exposed apples. 

7. Using a small spoon, scoop out the core of the apples, leaving a pretty thick wall on the sides and bottom to create apples bowl. 

8. Immediately squeeze a small amount of the lemon juice to keep from browing. (This also adds some much needed acid to this dish).

9. Next place a chunk of gouda in the bottom of the apple bowl.

10. On top of the gouda add the bacon and onion mixture. 

11. Top with a few more slices of gouda.

12. Sprinkle a dash of salt, pepper and cinnamon on top. 

13. Wrap each apple in aluminum foil and bake for 45 minutes to an hour, until the apples are soft, but not mushy. 

14. Remove from oven and sprinkle with candied pecans. 

15. Enjoy the rich flavors and aromas of Fall!
