Spiffy's Pinterest Picks: Pecan Pie
Pecans have always been a big deal in my family. At my grandparents' house in the Mississippi Delta there are giant pecan trees. I remember as a child my dad climbing the tall trees and shaking the branches. Then all us kids would run to gather up the pecans. Grandaddy would give us a little money for each bag of pecans we gathered. This is one of my favorite memories. My cousins and I had so much fun. This year my boyfriend is going to meet my Delta family for the first time at Thanksgiving and I am so excited. He happens to be a huge fan of pecan pie, so I'm sure we will be coming home with a few bags of pecans. Now on to the point of this story- what will we do with these pecans? If you read my blog, you know that I will not be making a traditional, corn syrup pecan pie. But, I have been hunting on Pinterest and found some great, cleaner versions that I would like to share with you! I plan to make at least one of the pies from this list for Thanksgiving. I'll share some pics with you when I do.
First of all the recipe calls for Kerrygold butter or Coconut Oil! Two of my favorite things. This recipe is also gluten-free, which may be helpful to those of you suffering from gluten sensitivity. This recipe is a strong contendor for my Thanksgiving pie.
This recipe is interesting for more reasons than one. First of all, it's made in a slow cooker! How cool is that? Second it uses honey in place of the traditional corn syrup. This cleaner version of pecan pie seems like a delightful way to enjoy time with family and friends.
This pecan pie looks amazing and the ingredient list is even prettier. It's free of grain, gluten, refined sugar, dairy and soy. So if you have someone who is prone to these types of allergies, this pie is perfect for you!
