Lime and coconut martini

This whimsy cocktail is the perfect way to welcome Spring. The sweet & sour flavors of lime & coconut will have you in the mood for warmer weather instantly!  

Even when indulging, it's important to me to use as many natural ingredients as possible. I turned to my trusty La Croix sparkling water, Stirrings simple syrup, & fresh lime juice. 

Beets are one of my favorite foods to use when I need to add a pink tint to any food or drink. It only takes a tiny amount of cooked beet to add the color which makes the flavor virtually undetectable. 

I snagged some violets growing wild in the backyard for this photo shoot. Adding seasonal elements into photos is not only charming, but tells a story. By sprinkling these tiny violots on my tile backdrop, I am inviting the viewer to recognize that this cocktail was created in the Spring!

Ingredients

1 oz
fresh squeezed lime juice
1 oz
Stirrings simple syrup
2 oz
Gin (Bombay Sapphire is my preferred brand)
1
can coconut La Croix (to top off the drinks, you won't use the whole can)
1
Small sliver of cooked beet (I use the Love Beets brand *NOTE DO NOT USE PICKLED BEETS)
1
lime slices for garnish

Instructions

Add all ingredients to a cocktail shaker along with 1/2 cup of ice.

Shake vigorously for about 1 minute. (This will feel like a long time, but shake, shake, shake, to make sure the pink color comes out of the small beet slice.)

Strain into two martini glasses, top with La Croix, and fresh lime slices.
