Spring is here! And with it comes fragrant, edible florals of all shapes and sizes. One of my favorites is honeysuckle. As a little girl I remember playing in the garden with my little brother. We would pluck the perfectly ripe, deep yellow honeysuckle from its stem, gently tug on the bottom of the flower, and gently pull the string through until the tiny dot of honey hit our tongues bursting with the promise of Summer just around the corner.

Each time I step outside, the smell gently reminds me of simpler days filled with laughter and adventure.

This cocktail combines fragrant orange blossom water, tart rhubarb puree, sweet honey, and floral honeysuckle. It's the perfect taste of Spring!

***DISCLAIMER: I have since learned that honeysuckle LEAVES ARE NOT EDIBLE. So if you choose to make this drink, simply only use the honeysuckle flower without the leaves.

Ingredients

4 oz
Gin (Bombay Sapphire is what I use)
2 oz
Rhubarb puree (I made this by blending 1 cup rhubarb, 2 tbs raw honey, 1 cup water, and then heating on low for a half hour on the stove)
2 oz
Simple syrup (Stirrings is the brand we like)
8
drops orange blossom water (found at your location Mediterranean grocer)
1 c
ice (for shaking)
1 bn
Fresh honeysuckel (for garnish)
1 c
Brut Champagne

Instructions

Add first 5 ingredients to a cocktail shaker and shake until chilled.

Pour into two martinie glasses.

Top with brut champagne.

Garnish with fresh honeysuckle and enjoy the flavors of Spring!
