Immune Boosting Chicken Soup


Cold and flu season is already here and I intend to bid it farewell immediately! After researching endlessly for immune boosting foods I have put together a fantastic tasting chicken soup. This soup is loaded with a lot of good things to boost your immunity. The turmeric is a quick acting anti-inflammatory. The garlic and lemon are both natural antibiotics. The veggies are loaded with vitamins. The chicken stock is full of amino acids that will speed recovery time, and the list goes on and on. Basically, if you are feeling a cold coming on, or right in the middle of the dreadful thing, this soup is for you. After eating this we immediately feel any swelling in the throat or sinuses go down and begin to notice less pain. Before you start using cold/flu medications please try this soup and see how you feel! 

Most of my ingredients came from Publix1 whole pastured or cage-free chicken thawed, As many fresh herbs as possible to make 2 handfuls (I used cilantro, rosemary and basil,), Enough filtered or distilled water to cover the entire bird, 3-4 tablespoons of ground turmeric Be very cautious with the turmeric because it will splash and stain. It is a very bright yellow, As much pepper as you like (pepper actually allows turmeric to be absorbed into your body), 3-4 tablespoons salt-free seasoning of choice (the “cleanest” ingredient list you can find), several pieces of ginger, Zest and Juice of one lemon 

Boil on high for at least 1½ hours until the chicken begins to fall off the bone.

Then strain the stock into a pot and allow the chicken to cool a little. Then pull out all the bones. 

Add the stock back to the big pot and add: 2 large sweet potatoes peeled and chopped, 2 large carrots, 1 tablespoon crushed garlic, 2 cups of broccoli ( I used frozen and it worked great, organic frozen is very cheap at Costco), 1 large onion roughly diced, 5-10 mushrooms (depending on your preference), and Juice from another whole (large) lemon.

Boil this on medium high for about 1 hour (your boiling time may vary, just make sure that the chicken is cooked and falling apart)

Once everything is tender and cooked through Add 1 can organic whole fat coconut milk and it's ready to serve!

Large Lemon (Separated! Zest it, then juice it, then discard it!)
