Sweetened Condensed Cashew Milk
I have been making cashew milk at home for years because of the healthy fats and the natural calming properties. So, you can imagine my delight when I discovered that Silk had started carrying their own Cashew Milk! I'm sure it will be nice to purchase pre-made non GMO cashew milk on those occasions that I do not have time to make it myself. I usually try to avoid store bought sweetened, condensed milk because of al the additives and processing. So I thought why not make a sweetened, condensed milk with the Cashew Milk I have on hand? It turned out quite delicious! I can't wait to make a decadent dessert with it.
1. Gather your ingredients. You will need:
2 Cups Silk (or homemade) Cashew Milk
3/4 Cups Organic Coconut Sugar
2. In a medium saucepan whisk together the milk and sugar until well combined. Cook on medium heat until it starts to steam, then reduce heat to low.
3. Cook uncovered (stirring every 15 minutes or so, to avoid a film developing on top) until the liquid reduces by half. A cute trick for this is listed on "Don't waste the Crumbs." She uses a straw to measure and mark with a sharpie, then checks periodically to see if the liquid is reduced by half according to the line on the straw. Cute idea!
4. Once your liquid is reduced by half, allow to cool a few minutes and store in a glass jar in the fridge. I am not positive how long it will last, since I plan on using it quickly.

Is the taste of cashew milk similar to that of almond milk?

Nadine, it is similar. Cashew milk is creamier and naturally has a light smoky flavor. It's wonderdul!
