I haven't done a fitness post in a while. To be honest, most of my summer fintess has consisted of outdoor adventures with the dog. Hi all! Thanks for stopping in. This week I felt motivated to switch over from 80/20 "clean eating" to 95/5 "modified paleo" and journal the challenges and victories with my readers! I love Ice Box Coffee! I love Pork! So the combo makes perfect sense to me. This recipe will give you the most succulent, flavorful pork you have ever had. It's simple, fun and absolutely delicious. Pineapple Upside down cake is one of those traditional desserts that no one wants to give up, regardless of allergies or food sensitivites. This recipe combines a gluten free cake mix, fresh pineapple, grass-fed butter and coconut sugar. Oh, I also had some duck eggs and used them in place of chicken eggs. I love Caribbean flavors in food. In American cuisine, it seems so often we place spices into one of two categories: savory or sweet. But, with Caribbean spices they do no such thing! I grew up thinking cinnamon was only used in desserts and salt was only used in savory foods. Boy, was I wrong! This simple marinade recipe combines aromatic spices and coconut milk! I chose to use it to marinate shrimp, but it would be great on any kind of meat or veggies, or used as a sauce on top of a veggie and quinoa bowl.
